if you follow me on twitter you may have noticed a significant increase in my food-related blurbs these last couple of weeks. and on my instagram i recently posted the photo below, captioned “whipped up some dinner! spanish rice w cilantro chicken #nom” (i’m social-media-savvy like that):

i can’t tell you how HUGE of a milestone this is for me. the people i grew up with (hi mom! hi aunties!) can attest to my utter lack of cooking skills — or even interest in anything to do with it — pretty much my entire life. but my kitchen experiments in the last few months have proven quite productive; not only are they entirely edible, but perfectly pleasant on the palate as well. /humblebrag

however i cannot get credit for the recipes i have used. they’ve all been sourced from this awesome thing called the internet, and because i love you guys, i have decided to share some of my recent favorites with you.

 

above is the step-by-step video on making the easiest, tastiest grilled chicken everrr. it’s by benjimantv and i swear you will want to try it STAT. (side note: i fry mine on a nonstick pan with a tiny bit of EVOO since i don’t have a grill…yet.)

 

here is the recipe for the spanish rice i like to eat with my chicken, from allrecipes.com (i could spend days on that website!). although some argue that this isn’t legit “spanish rice”, i still think it’s great and the combination with the cilantro chicken is heavenly. (another side note: i reduce the amount of rice to just one cup and keep the rest of the ingredients in the same measurement, then add about a tablespoon of cumin before i simmer. delish!)

 

if you don’t feel like eating rice with your chicken, you may want to go for a simple pasta dish. this one is called pasta à la checca (which i also got from benji) and the only thing you will have to cook is your noodles! SO easy. it creates a delectable companion to the grilled chicken, but also tastes great on its own.
